El Domador del Fuego - The Fire Tamer - is a master at harnessing the searing heat and the feral wildness of this ancient territory. The Rioja region benefits from a Mediterranean climate which is moderated by the Sierra Cantabria, a small mountain range which prevents clouds from forming over the area. The Tempranillo grapes were carefully picked at optimum ripeness during the second week of October, from vines aged between 4 and 50 years old. After being crushed and destemmed, the grapes were fermented in stainless steel tanks at 28 degrees C for 15 days. The wine was then aged for 3 years in American and French oak barrels, adding depth of flavour and complexity.
The style is just as a Rioja should be; oak, sandalwood, cedar and sweet spices. There is plenty of sharpness and balance, as well as fruits like plums and cherries, with a mineral finish. Viva Espana!
